



Omakase Sushi: a refined tasting menu

Omakase comes from the Japanese word for “I leave it to you”. An opportunity for gourmets to discover the signature dishes of the hotel’s sushi bar. From noon to night, depending on the catch of the day, the hotel’s Japanese specialties invite you to play with your chopsticks. Melt-in-your-mouth goma-ae, soft sashimi and nigiri prepared according to the rules of the art.

The Omakase Sushi experience begins with usu-zukuri sea bass fillet with caviar, seared “ikejime” salmon trout and simmered chicken fillet. It continues with flambé nigiri sushi (toro, salmon trout, wagyu A5 “Kagoshima”), classic nigiri sushi (bluefin tuna, negi-toro, chu-toro, scallops, shrimp, king crab) and lobster tempura maki with caviar. Main courses include grilled scallops, shrimp and salmon trout with miso and leek sauce, and grilled A5 “Kagoshima” wagyu entrecôte with mushroom sauce. Miso soup and wakame seaweed complete this culinary journey. To finish on a sweet note, the chef unveils his signature dessert to guests.

A daily invitation to Japanese flavors
Sushi Bar’s Bento Boxes turn every lunch into a culinary voyage. Carefully composed, these harmonious boxes reveal a symphony of traditional dishes: Miso soup, delicately prepared sushi and sashimi, crispy tempura, tasty grilled meats and, to round off the meal, the surprise dessert of the day. The composition of the Bento-Box changes every day, ensuring that even the most demanding gourmets never eat the same thing two days in a row.

About the sushi bar:

Open onto the Patio with a dedicated terrace, the intimate restaurant mixes sobriety and flashes of brilliance, with its wall of antique theater masks mimicking the full range of emotions and its giant chandelier under a glass roof, a nod to the custom of sakura ohanami.
Under a sky of blown-glass cherry blossoms, the brigade of Japanese sushi masters officiate before the eyes of guests seated at the counter. Quick, precise movements bring to life genuine gourmet masterpieces, in keeping with traditional techniques and know-how. From the omakase menu to the à la carte nigiri sushi, sashimi and tempura, each plate is a work of art, and the desserts are no exception.
