Johanna Le Pape is dedicated to combining taste and aesthetics with healthier, more nutritious pastries.

Creative chef at Ladurée, training chef for Ducasse Education, World Champion of Pastry Arts in 2014, then Le Meurice Palace, working with Cédric Grolet and Maxime Frédéric, she took her first steps into the world of gastronomy and luxury at this beautiful 5-stars hotel on Paris’s Left Bank.

A pastry chef renowned worldwide for her creativity, professionalism, and innovative vision, she travels the globe to produce, train, and discuss the rapidly changing world of pastry.

Since 2016, she has been putting her expertise as a consulting pastry chef to good use in the areas of product development and professional training. She participates in television Broadcast on the theme of baking & cooking competitions with world-renowned chefs for M6 TV. (Top Chef & The Best Pastry Chef).

From start-ups to agri-food companies, she supports them in the field of food innovation and the creation of “well-being” products.

On September 27, 2023, Johanna Le Pape published her book “Révolution Pâtisserie” with Flammarion Éditions, filled with new ideas based on 45 recipes and more than 250 ingredients. “Révolution Pâtisserie” stands out for its innovative approach to pastry making. It consists of two main parts: the first explores 12 key ingredient families in detail, while the second presents basic, classic, and creative recipes.

A revolution built on five founding pillars:

  • Diversify, by incorporating a wide variety of ingredients into our pastries (flours, sugars, milks, oils, spices, essential oils, etc.).
  • Balance sugars by combining them with fiber to achieve a low glycemic index.
  • Source seasonal ingredients from committed producers.
  • Innovate by preserving micronutrients through appropriate processing and cooking methods.
  • Recycle by reusing waste to create new raw materials.

Through demonstrations and professional training, she travels internationally to train and promote wellness and socially conscious pastry making in international culinary schools.
